Soup Recipes
This is one of my favorite soups to serve my family after Christmas, and use up the left over ham.
Split Pea Soup
Left over ham deboned and cut or pulled into chuncks. (About a puond or so)
1 bag of dry split peas (I use 2 bags and more ham!)
1 lb of baby carrots
3 or 4 good sized potatoed cut into chuncks (you can leave the skin on or off)
1 medium sixed onion cut into chunks (or smaller if your family doesn't liketo see onion on their soup!)
2 to 4 bay leaves (depending on the size of the leaves...the larger the leaf, the less you will need.)
Salt and pepper to taste.
In a large stock pot, add your beans and cover with water,(about 1 quart of water) bringing them to a boil and then lower the heat. You may need to add more water as the soup cooks and thickens. Add in the carrots, onion, salt, pepper and bay leaves. Once the beans are cooked through, you can add in the ham and potatoes. Continue cooking until the potatoes are done. Soup will thicken more as it sits. It is even better the next day! Enjoy!
For those who do not eat ham, you cansubstitute with chicken or turkey. For me, it isn't as tasty, but still very good.
